A Guide To Dry Aging: Rib Roast Experiment #shorts
Dry aging brings the best out of beef but is a process that is often misunderstood by meat lovers. My goal is to equip as many as possible with the basics, so we can all make better decisions at restaurants, butcher shops & supermarkets. Ultimately, I hope that documenting my own exploration of this subject will allow others to have better steak eating experiences themselves.
In this experiment, I started with a rib roast that I’m dry aging in my brand new UX1000 from @dryager . I’ll be pulling steaks every week, documenting changes in taste and flavor.
My dry aging journey started years ago, dry aging all sorts of random cuts in my college mini fridge. Needless to say, consistency and quality were lacking. More than anything, it taught me that Dry Aging is very much a fluid art form, and I have no doubt this will be a lifelong journey of learning. I’m very lucky to be friends with people with a wealth of knowledge on this subject such as @JessPryles and @andrewgwhitney, and I look forward to continuing this exploration.
